I’m not looking for-profit institutions like Uni of PHoenix, or so forth.

Most state schools now offer at least some of their classes on-line. Check with your local community college or university. While not 100% will be on-line, you can probably do your first year or two with very few actual visits to the campus. I am currently a junior at Upper Iowa University. I love it and highly recommended it to anyone! The courses are 8 week terms and you only need to take 2 courses per term to be considered full-time for financial aid etc. Check it out at www.uiu.edu
